  • 1 salmon fillet (skin-on or skinless)
  • 1 cup cooked white rice
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt & cracked black pepper to taste
  • Optional: squeeze of lemon

Instructions

  1. Season the salmon fillet with salt and cracked black pepper. Heat 1 tsp olive oil in a skillet over medium-high heat and sear the salmon for 3–4 minutes per side until golden brown and cooked through. Set aside.
  2. In the same skillet, add another tsp of olive oil and sauté the minced garlic until fragrant. Toss in chopped zucchini and cook for about 3 minutes before adding halved cherry tomatoes and fresh spinach until wilted.
  3. Stir in the cooked white rice into the sautéed veggies, seasoning with salt and pepper to taste. Mix well until everything is heated through.
  4. Serve the salmon on top of the garlic veggie rice bowl, adding a fresh squeeze of lemon juice if desired.
