  • 2 filet mignon steaks (68 oz each, 1.52 inches thick)
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp vegetable oil (or grapeseed/avocado oil)
  • 2 tbsp unsalted butter
  • 2 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme

Instructions

  1. Let the filet mignon sit at room temperature for 30 minutes before cooking. Pat dry with paper towels.
  2. Season the steaks generously with salt and black pepper on both sides.
  3. Heat a cast iron skillet over high heat until very hot. Add the oil.
  4. Sear the steaks for 2–3 minutes on one side without moving them, then flip using tongs and sear the other side for another 2–3 minutes.
  5. Reduce heat to medium, add butter, garlic, and herbs to the skillet. Baste the steaks with melted butter for 1–2 minutes.
  6. Check doneness with a meat thermometer (125°F for rare; adjust as desired).
  7. Transfer steaks to a plate and let rest for 5 minutes before serving.
