  • 1 tbsp orange zest
  • 1/4 cup unsalted butter
  • 1/2 cup full-fat sour cream
  • 1/4 cup water
  • 1/4 cup freshly squeezed orange juice
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • For the frosting: 1 cup unsalted butter, 3 1/2 cups powdered sugar, and more orange zest and juice.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together sugar, orange zest, and butter until fluffy. Mix in sour cream, water, orange juice, egg, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  4. Spoon batter into liners and bake for about 19 minutes or until a toothpick comes out clean. Cool completely.
  5. Prepare the filling by whisking sugar, zest, egg yolks, and juice in a saucepan over low heat until thickened. Stir in butter and strain for smoothness.
  6. Fill cooled cupcakes with orange curd filling using a piping tip.
  7. For the frosting, beat together butter, zest, powdered sugar, and juice until smooth. Frost each cupcake as desired.
