One Pot Shrimp and Sausage Jambalaya is a vibrant, flavorful dish that brings the essence of Cajun cooking right to your table. This easy-to-prepare meal combines tender shrimp with savory sausage, seasoned rice, and a medley of vegetables—all cooked together in one pot for minimal cleanup.

  • 1 tablespoon olive oil
  • 12 ounces chicken sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled and deveined)
  • 2 green onions (chopped for garnish)
  • Fresh parsley (chopped for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced chicken sausage and cook until browned.
  2. Stir in diced onion, bell peppers, celery, and minced garlic. Sauté until softened.
  3. Add long-grain rice, Cajun seasoning, smoked paprika, thyme, salt, and pepper; mix well.
  4. Pour in chicken broth and diced tomatoes (if using). Bring to a boil, then reduce heat to low.
  5. Add shrimp on top of the rice mixture. Cover pot and cook for 15–20 minutes until shrimp are pink and rice is tender.
  6. Fluff the jambalaya with a fork and garnish with chopped green onions and parsley before serving.
