  • 1 lb ground beef
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups chicken broth
  • 12 oz penne pasta
  • 1 cup heavy cream

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan, egg, Cajun seasoning, garlic powder, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides and set aside.
  3. In the same pot, sauté onion, bell pepper, and garlic until softened. Stir in Cajun seasoning.
  4. Add diced tomatoes and chicken broth to the pot along with the penne pasta; bring to a boil and then simmer for about 10–12 minutes until pasta is al dente.
  5. Return meatballs to the pot and cover; cook for another 5–7 minutes until fully cooked.
  6. Stir in heavy cream and additional Parmesan until creamy; adjust seasoning if needed.
  7. Serve hot garnished with fresh parsley.
