  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sausage rounds and cook until browned (4–5 minutes). Remove from skillet.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  3. Sprinkle in smoked paprika and black pepper. Toast uncooked rice for about 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix well. Return browned sausage to the pan.
  5. Bring to a boil, then cover and reduce heat to low. Simmer for 20–22 minutes or until rice is tender.
  6. Let rest for 5 minutes before fluffing with a fork and serving garnished with fresh parsley.
