  • 1 lb Ground Beef (or ground turkey or chicken)
  • 3 medium Potatoes (peeled and diced)
  • 1 medium Onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Beef Broth (or chicken broth)
  • 1 cup Cheddar Cheese (shredded)
  • 1 tbsp Olive Oil (for cooking)
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • Fresh Parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper for about 3-4 minutes.
  2. Add diced potatoes and cook until they start to soften, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, brown the ground meat until fully cooked, breaking it apart as it cooks.
  4. Stir in paprika, onion powder, garlic powder, salt, and pepper; cook for another 3-4 minutes.
  5. Return potatoes to the skillet with beef broth. Cover and simmer for about 5 minutes until potatoes are tender.
  6. Top with shredded cheese; cover again until melted, about 2-3 minutes.
