- 1 lb Ground Beef (or ground turkey or chicken)
- 3 medium Potatoes (peeled and diced)
- 1 medium Onion (chopped)
- 1 bell pepper (chopped)
- 2 cloves Garlic (minced)
- 1 cup Beef Broth (or chicken broth)
- 1 cup Cheddar Cheese (shredded)
- 1 tbsp Olive Oil (for cooking)
- 1 tsp Paprika
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- Fresh Parsley (optional, for garnish)
- Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper for about 3-4 minutes.
- Add diced potatoes and cook until they start to soften, about 8-10 minutes. Remove and set aside.
- In the same skillet, brown the ground meat until fully cooked, breaking it apart as it cooks.
- Stir in paprika, onion powder, garlic powder, salt, and pepper; cook for another 3-4 minutes.
- Return potatoes to the skillet with beef broth. Cover and simmer for about 5 minutes until potatoes are tender.
- Top with shredded cheese; cover again until melted, about 2-3 minutes.
