  • 3 cloves garlic (minced)
  • 68 oz chicken thighs (cut into bite-sized pieces)
  • 1/4 cup frozen mixed vegetables
  • 3 brown mushrooms (diced)
  • 2 cups cooked white rice (day-old preferred)
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 6 large eggs
  • 2 tablespoons milk
  • Salt

Instructions

  1. Heat a skillet over medium heat. Sauté diced onions and minced garlic until fragrant.
  2. Add chicken pieces and cook until browned.
  3. Stir in mixed vegetables and mushrooms; cook until tender.
  4. Add day-old rice, ketchup, soy sauce, and half the salt. Mix well until heated through.
  5. In a mixing bowl, whisk together remaining eggs, milk, and salt.
  6. In another skillet over medium-low heat, pour in the egg mixture; gently stir until just set but still soft.
  7. Spoon the rice mixture onto one side of the omelet in the skillet and fold over. Slide onto plates and serve with extra ketchup.
