  • 1 cup panko bread crumbs
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
  2. In a small bowl, mix the panko bread crumbs with milk until well combined.
  3. Sauté diced onion in melted butter until fragrant, then add minced garlic and cook for an additional few minutes. Let cool.
  4. In a large bowl, combine ground beef, egg, soaked bread crumbs, Worcestershire sauce, thyme, salt, and the cooked onion mixture. Mix gently but don't overwork the meat.
  5. Shape into a loaf on the prepared baking sheet and cut a crisscross pattern on top.
  6. Bake uncovered for 40 minutes while you prepare the sauce by mixing ketchup, brown sugar, and mustard.
  7. After 40 minutes, spread the sauce over the meatloaf and bake for an additional 30-35 minutes until it reaches an internal temperature of 160°F (70°C).
