  • 1 salmon fillet
  • 1 cup asparagus spears
  • 1 cup button mushrooms
  • 1 cup cherry tomatoes
  • 2 eggs
  • 1 tsp olive oil
  • 1 tsp butter
  • Salt & pepper to taste

Instructions

  1. Sauté cherry tomatoes in olive oil over medium heat until softened; set aside.
  2. Season the salmon with salt and pepper. Pan-sear in olive oil skin-side down for 4-5 minutes; flip and cook for another 3-4 minutes until done.
  3. In another pan, sauté asparagus with olive oil and pinch of salt until bright green (3-4 minutes).
  4. Melt butter in a small skillet; add minced garlic and mushrooms, cooking until browned (4-5 minutes).
  5. Whisk eggs with milk (if using), salt, and pepper; scramble gently over low heat with melted butter until creamy.
  6. Plate the salmon with asparagus, mushrooms, scrambled eggs, and roasted tomatoes.
