  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or chunks
  • 1 tablespoon coconut oil (optional)

Instructions

  1. In a large mixing bowl, combine the chopped pistachios, oats, shredded coconut, and sea salt.
  2. In a microwave-safe bowl, melt the almond butter and honey (or maple syrup) together at 20-30 second intervals until smooth.
  3. Stir in the vanilla extract into the melted mixture and pour it over the dry ingredients. Mix well until everything is coated.
  4. Line an 8×8-inch baking pan with parchment paper. Press the mixture firmly into the pan.
  5. Melt the dark chocolate in another microwave-safe bowl using the same interval method until smooth. Drizzle over the pressed mixture.
  6. Refrigerate for at least 2 hours to allow bars to set before cutting into desired sizes.
