  • 4 dried ancho chiles
  • 4 chipotle peppers in adobo
  • 1 onion, chopped
  • 4 garlic cloves
  • ½ cup crushed tomatoes
  • 3 lbs. organic chuck roast beef, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 12 organic corn tortillas
  • Shredded Oaxaca cheese
  • 1 cup chopped fresh cilantro
  • Pico de gallo

Instructions

  1. Prepare the sauce by softening the dried chiles in simmering beef stock or water for about 15 minutes. Blend with onion, garlic, tomatoes, and spices until smooth.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Season beef with salt and pepper, then sear until browned.
  3. Add the blended sauce to the pot, ensuring the beef is submerged. Bring to a boil and then reduce to low heat. Cover and simmer for about 150 minutes until tender.
  4. Shred the beef using two forks once cooked.
  5. Heat tortillas in a skillet until pliable, fill with shredded beef and cheese, fold, and fry until crispy.
