Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 5 to 6 Tablespoons ice water
  • 4 medium apples, peeled and diced (about 3 cups)
  • 1/4 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons all-purpose flour for filling
  • Sanding sugar for topping (optional)

Instructions

  1. Prepare the Pie Crust: In a mixing bowl, combine flour, sugar, and salt. Mix in cold butter until crumbly. Gradually add ice water until dough forms. Shape into a disk, wrap, and chill for at least 30 minutes.
  2. Make the Apple Filling: Mix diced apples with white sugar, brown sugar, cinnamon, and flour until combined.
  3. Assemble: Preheat oven to 375°F (190°C). Roll out chilled dough and cut circles larger than muffin tin cups. Place in tin and fill with apple mixture.
  4. Bake: Brush edges with egg wash and sprinkle with sanding sugar if desired. Bake for about 18 minutes or until golden brown.
