  • 3/4 cup Unsweetened cocoa powder (Dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, whisk together sugar, eggs, melted butter, oil, and vanilla until smooth. In another bowl, combine flour, cocoa powder, cornstarch, and salt. Mix the dry ingredients into the wet until combined; fold in chocolate chips.
  3. Pour the brownie batter into the prepared pan and bake for about 25 minutes.
  4. Meanwhile, prepare the monster cookie topping by mixing together flour, cornstarch, baking soda, baking powder, salt, butter, sugars, peanut butter, vanilla extract, and an egg until fluffy. Stir in oats and mini chocolate chips/M&Ms.
  5. After the brownie layer is baked, spoon dollops of cookie dough on top and return to the oven for an additional 15–20 minutes until golden.
