  • 5 ancho peppers
  • 5 guajillo peppers
  • 23 chiles de arbol (optional, for spicier)
  • 1 tablespoon olive oil
  • 1 large white onion
  • 3 large tomatoes
  • 5 cloves garlic
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes
  • 4 cups beef stock
  • 3.5 pounds lamb shoulder or beef shank

Instructions

  1. Toast the dried peppers in a large pan over medium heat for 1-2 minutes on each side until fragrant.
  2. Soak the toasted peppers in hot water for 20 minutes until softened.
  3. In the same pan, heat olive oil and sauté chopped onion and tomatoes for about 5 minutes until softened, then add garlic.
  4. Blend the sautéed vegetables with rehydrated peppers, vinegar, seasonings, and 1 cup of beef stock until smooth.
  5. Marinate cut meat with the sauce for at least 2 hours or overnight in the refrigerator.
  6. Combine marinated meat with remaining sauce and beef broth in a pot; cover and cook on medium heat for about 3 hours until tender.
  7. Serve as a soup or shredded in tortillas for tacos.
