  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine zucchini, eggplant, bell peppers, onion, and cherry tomatoes. Drizzle with olive oil and add garlic, oregano, thyme, basil, salt, and pepper. Toss until well-coated.
  3. Spread the vegetable mixture evenly on the prepared baking sheet. Roast for 25–30 minutes until tender and slightly caramelized; stir halfway through cooking.
  4. Serve warm topped with crumbled feta cheese and chopped parsley for added flavor.
