  • 2 large eggs
  • Juice of 2 lemons
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the diced onion in olive oil for about 5 minutes until softened. Add minced garlic and cook for an additional 1-2 minutes.
  2. Pour in chicken broth and bring to a boil. Add rice (or orzo) and reduce heat to simmer for 10-12 minutes until cooked.
  3. In a medium bowl, whisk eggs until frothy, then gradually add lemon juice while whisking.
  4. Temper the egg mixture by slowly adding hot broth from the pot while whisking continuously, then return it to the pot.
  5. Stir in shredded chicken and heat through without boiling. Season with salt and pepper.
