  • 1.5 lbs boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil
  • 2 medium zucchini
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 4 cloves garlic
  • 4 tbsp sun-dried tomatoes
  • Fresh herbs: oregano, basil, thyme
  • Juice of 1 lemon
  • Kalamata olives for garnish
  • Feta cheese for garnish

Instructions

  1. Prep all ingredients by washing and chopping them.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken seasoned with salt and pepper; cook until golden brown (5–7 minutes).
  3. Remove chicken from skillet; add another tablespoon of olive oil. Sauté onions and garlic until fragrant. Add zucchini, bell peppers, cherry tomatoes, sun-dried tomatoes, and herbs; cook until tender.
  4. Return chicken to the skillet; combine well and adjust seasoning if necessary.
  5. Finish with fresh lemon juice and stir in olives and feta before serving hot.
