Ingredients

For the Salad:
1 large bunch celery, thinly sliced (about 4 cups)
1/4 cup red onion, very thinly sliced
1/3 cup kalamata olives, sliced
1/4 cup fresh parsley, finely chopped
2 tablespoons fresh mint, chopped
1/4 cup crumbled feta cheese (optional)
1/4 cup toasted almonds or walnuts (optional)

For the Dressing:
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon lemon zest
Salt, to taste
Freshly ground black pepper, to taste

Instructions

  1. Wash and trim the celery. Thinly slice the stalks on a slight diagonal and place them in a large mixing bowl.

  2. Add the sliced red onion, kalamata olives, parsley, and mint to the bowl.

  3. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and black pepper until well combined.

  4. Pour the dressing over the salad and toss thoroughly to coat all ingredients evenly.

  5. Gently fold in the crumbled feta cheese and toasted nuts, if using.

  6. Let the salad rest for 10–15 minutes to allow the flavors to meld.

  7. Taste and adjust seasoning if needed. Serve chilled or at room temperature
