  • 2 pounds lean ground beef (or substitute half with turkey or chicken)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 3/4 cup ketchup (for meatloaf and glaze)
  • 1/4 cup brown sugar (for glaze)
  • 2 tablespoons apple cider vinegar (for glaze)
  • Italian seasoning
  • salt
  • pepper
  • fresh parsley

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet over medium heat, melt butter and sauté chopped onions for 3-4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. In a mixing bowl, combine sautéed onions, ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, pepper, and parsley. Mix until just combined.
  4. Place the meat mixture into a loaf pan and smooth the top.
  5. Bake for 40 minutes.
  6. While baking, prepare the glaze by mixing ketchup, brown sugar, and apple cider vinegar in a small bowl.
  7. After the initial baking time, spread the glaze over the meatloaf and return to the oven for an additional 20–30 minutes until fully cooked.
  8. Allow the meatloaf to rest for about 10 minutes before slicing.
