  • 2 cups cooked shredded organic chicken breasts
  • 1 Tbsp extra virgin olive oil
  • 4 cups organic chicken stock
  • 1 1/2 cups organic heavy cream
  • 16 oz package potato gnocchi
  • 1 cup chopped organic kale
  • 56 organic sundried tomatoes
  • 1 Tbsp tomato paste, organic
  • 1 1/2 Tbsps Tuscan Marry Me blend
  • 1 tsp sea salt
  • 3 Tbsps cooking apple vinegar
  • 1/2 lemon, freshly-squeezed
  • freshly grated parmesan for garnish

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Sauté minced garlic until fragrant.
  2. Stir in flour to create a roux; cook for about 2 minutes.
  3. Gradually whisk in chicken stock, stirring continuously to avoid lumps.
  4. Add shredded chicken, Tuscan blend, salt, sundried tomatoes, tomato paste, heavy cream, apple vinegar, lemon juice, and kale. Bring to a gentle boil.
  5. Add gnocchi and cook according to package instructions (about 3-5 minutes). Stir occasionally until tender.
  6. Serve hot with freshly grated parmesan cheese on top.
