  • 1 and 1/2 tablespoons butter
  • 4 cloves garlic, grated
  • 2 cups light cream
  • 1 cup fresh grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes + 1 tablespoon oil from the jar
  • 1 tablespoon finely chopped fresh basil
  • 2 teaspoons chicken bouillon powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper (adjust to taste)
  • 3/4 box of thin linguini or your choice of long noodles

Instructions

  1. Prepare sun-dried tomato paste by chopping the tomatoes finely and blending them with oil until coarse.
  2. Boil salted water in a pot and cook the noodles until al dente; reserve about 1/4 cup of pasta water before draining.
  3. In a non-stick pan over medium heat, melt butter and sauté garlic, crushed red pepper, thyme, and chicken bouillon for one minute.
  4. Add light cream to the pan, simmering gently for about five minutes without boiling.
  5. Stir in Parmesan cheese, sun-dried tomato paste, salt, pepper, garlic powder, and basil; simmer for another five to seven minutes.
  6. Combine cooked noodles with the sauce; use reserved pasta water to adjust consistency if needed.
