  • 1 lb fettuccine pasta
  • 1/4 cup all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons butter (divided)
  • 2 medium shallots (finely chopped)
  • 4 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/4 cup fresh basil (chopped)
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a medium bowl, mix chicken with flour, Italian seasoning, salt, and pepper until evenly coated.
  2. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the chicken and cook until golden brown (5-7 minutes). Remove and set aside.
  3. Melt remaining butter in the same skillet; sauté shallots for about 3–5 minutes and add garlic for another minute until fragrant.
  4. Deglaze with chicken broth, simmering for about 2–3 minutes before stirring in heavy cream, sun-dried tomatoes, red pepper flakes, and Parmesan cheese until smooth.
  5. Return chicken to the skillet; season with salt and pepper. Simmer briefly before incorporating fresh basil.
  6. Cook fettuccine according to package directions; drain but reserve some pasta water.
  7. Combine pasta with the chicken sauce in the skillet, adding reserved pasta water if necessary for desired consistency.
  8. Serve immediately with extra Parmesan and fresh basil on top.
