  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (for glaze)
  • 1/2 cup pure maple syrup
  • 1/4 tsp ground cinnamon (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease one 9×5 inch loaf pan.
  2. In a small bowl, mash bananas with brown sugar, vanilla extract, and cinnamon. Set aside.
  3. In a large bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in eggs until well combined.
  5. Sift in flour, baking soda, and salt; stir until just combined.
  6. Gently incorporate mashed banana mixture into the batter.
  7. Pour batter into prepared pan and bake for 30 minutes, then reduce temperature to 325°F (163°C) and bake an additional 15-20 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
