  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup walnuts or pecans, roughly chopped
  • 1/3 cup maple syrup (for topping)

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. In a mixer, cream together softened butter and brown sugar until fluffy (about 3–4 minutes). Add maple syrup and mix for one more minute. Incorporate eggs one at a time, mixing well after each addition. Then add mashed bananas and vanilla extract until combined.
  4. Gradually mix in the dry ingredients, alternating with yogurt, being careful not to overmix. Gently fold in chopped walnuts or pecans.
  5. Pour batter into the prepared loaf pan, topping with reserved nuts if desired. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Drizzle warm maple syrup over the top before allowing it to cool completely in the pan.
