Mango Tres Leches is a delightful twist on the classic Latin American dessert, combining the traditional rich, creamy flavors with the refreshing sweetness of ripe mango.   • 5 Large eggs (separated, room temperature)
  • 1 cup White granulated sugar (divided)
  • 1 1/2 tsp Vanilla extract
  • 1/4 cup Whole milk (room temperature)
  • 1 cup All-purpose flour (spooned and leveled)
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 14 oz Sweetened condensed milk
  • 12 oz Evaporated milk
  • 1/2 cup Heavy whipping cream
  • 1 cup Heavy whipping cream (cold)
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Mango puree (about 1 large mango, plus more for drizzling on top)
  • Fresh mango (peeled and cut into small chunks)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the egg yolks with 3/4 cup sugar until light in color. Stir in vanilla extract and whole milk until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until smooth.
  4. In a separate clean bowl, beat egg whites until soft peaks form. Gradually add remaining sugar while continuing to beat until stiff peaks form.
  5. Gently fold egg whites into the batter in three additions until fully incorporated.
  6. Pour the batter into a greased 9×13-inch baking dish. Bake for about 25 minutes or until a toothpick inserted comes out clean. Allow it to cool completely.
  7. In a mixing bowl, combine sweetened condensed milk, evaporated milk, and any remaining mango puree. Mix well.
  8. Once cooled, poke holes all over the cake using a fork. Pour the milk mixture over the cake so it absorbs all of it. Let it sit for at least 4 hours or overnight in the refrigerator.
  9. In another bowl, whip cold heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  10. Spread whipped cream over soaked cake evenly. Top with fresh mango chunks or additional mango puree if desired. Slice and serve chilled for maximum enjoyment!
