  • 8 egg yolks
  • 1⅓ cups fresh mandarin oranges (crushed)
  • ¾ cup milk
  • 2 cups cake flour

  • ½ teaspoon salt
  • For frosting: 2 cups heavy cream
  • ½ cup powdered sugar
  • 16 ounces fresh pineapple (crushed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round baking pans.
  2. Crush fresh mandarin oranges using a food processor until pureed.
  3. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add egg yolks one at a time followed by crushed mandarin oranges.
  4. In another bowl, sift together cake flour, baking powder, and salt. Gradually mix this into the wet ingredients alternating with milk until just combined.
