  • 45 medium Russet potatoes
  • 1.5 lbs ground beef
  • 2 tbsp olive oil
  • 1 medium yellow onion
  • 1 oz taco seasoning
  • 8 oz cheddar cheese
  • Juice of 1 lime
  • 1 Roma tomato diced
  • Handful of fresh cilantro chopped
  • Reserved 1/4 chopped yellow onion
  • Your favorite hot sauce
  • Optional toppings: sour cream or Greek yogurt, sliced jalapeños, avocado or guacamole

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Toss potato slices with olive oil and seasonings. Spread in a single layer and roast for 45 minutes, flipping every 15 minutes until crispy.
  2. In a large skillet over medium heat, brown ground beef with three-fourths of the chopped onion (about 8–10 minutes). Drain excess grease.
  3. Stir in taco seasoning and water or broth; simmer until thickened (5–7 minutes).
  4. For the cheese sauce, melt butter in a saucepan, whisk in flour and spices, then gradually add milk until thickened. Stir in grated cheddar until smooth.
  5. Assemble bowls by layering crispy potatoes, taco meat, and cheese sauce. Garnish with fresh lime juice, diced tomatoes, cilantro, and other toppings as desired.
