  • 3 stalks celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 14 ounces canned artichoke hearts, drained and chopped
  • 1/2 cup marinated sun-dried tomatoes, sliced
  • 32 ounces chicken stock or broth
  • 1 Tbsp lemon juice
  • 1 cup packed fresh spinach
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot. Sauté diced celery, onion, garlic, and red pepper flakes for about 5 minutes until softened.
  2. Add chopped artichokes and sun-dried tomatoes. Pour in chicken stock and lemon juice; simmer for another 5 minutes.
  3. Stir in spinach until wilted, then add heavy cream. Simmer gently and season with salt and pepper to taste.
  4. Remove from heat and stir in grated cheese until melted. Serve hot.
