  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Prepare the vegetables by washing and chopping them.
  2. Heat olive oil in an Instant Pot or large pot over medium heat. Sauté carrots, onion, celery, and garlic until soft (about 5 minutes).
  3. Stir in black pepper, parsley, thyme, salt, and bay leaves.
  4. Add the chicken breasts and pour in the chicken broth; stir gently.
  5. Cook under high pressure for 20 minutes in an Instant Pot or simmer for about 30 minutes on the stovetop until the chicken is cooked through.
  6. Remove the chicken, shred it once slightly cooled, and return to the pot with dry orzo. Cook for another 10 minutes until the orzo is tender.
  7. Stir in fresh lemon juice just before serving.
