  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 2 tablespoons flour
  • 6 cups chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice (or to taste)
  • Salt and pepper (to taste)

Instructions

  1. In a large soup pot, heat butter and olive oil over medium-high heat. Add celery, carrots, and onion; sauté for 5-7 minutes until tender.
  2. Stir in minced garlic and cook for about 30 seconds. Sprinkle in flour and cook for another minute.
  3. Pour in chicken broth while stirring until flour dissolves completely. Add Italian seasoning and chicken breasts; bring to a boil.
  4. Cover slightly ajar with a lid, reduce heat, and simmer for about 15 minutes.
  5. Stir in uncooked orzo pasta and cook uncovered for another 10 minutes or until orzo is tender.
  6. Remove chicken from pot, chop into bite-sized pieces, return to soup along with lemon juice, salt, and pepper to taste.
