  • 1 cup sour cream
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl; press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  3. In another bowl, beat cream cheese and sugar until smooth. Mix in vanilla, eggs one at a time, sour cream, lemon juice, zest, and baking powder until well blended.
  4. Pour filling over the cooled crust and smooth the top with a rubber spatula.
  5. Bake for about 50–60 minutes until set but slightly jiggly in the center; cool at room temperature before refrigerating for at least four hours.
