  • 12 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1 (15-ounce) can Diced Tomatoes, with juice
  • 1 (15-ounce) can Tomato Sauce
  • ⅓ cup Tomato Paste
  • 4 cups Chicken Broth
  • 12 cups Water
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt
  • Black Pepper, to taste
  • 8 ounces Bowtie Pasta, uncooked
  • ½ cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese, shredded
  • ¼ cup Parmesan Cheese, shaved, shredded, or freshly grated
  • ¼ cup Fresh Parsley, chopped

Instructions

  1. In a large soup pot over medium-high heat, add olive oil and sauté diced onion and minced garlic until onions are translucent.
  2. Add ground beef and cook until browned; drain excess fat.
  3. Stir in diced tomatoes (with juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add uncooked bowtie pasta. Reduce heat to medium and simmer for 10–15 minutes until pasta is tender.
  5. Adjust consistency with water or additional broth as needed.
  6. Stir in ricotta, mozzarella, and Parmesan cheese just before serving or top individual bowls with cheese.
  7. Garnish with chopped parsley.
