  • 1/4 cup olive oil
  • 1/4 cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, peeled, seeded, and grated
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 6 pita breads
  • 1 red onion, thinly sliced
  • 2 tomatoes, sliced
  • Fresh parsley, chopped

Instructions

  1. In a large bowl, whisk together olive oil, red apple vinegar, minced garlic, oregano, rosemary, lemon zest, salt, and pepper until well combined. Add the cubed lamb to the marinade, ensure each piece is coated evenly, and cover the bowl with plastic wrap. Refrigerate for at least 4 hours; overnight is best for deeper flavor.
  2. Peel, seed, and grate the cucumber. Use a clean kitchen towel or cheesecloth to squeeze out excess liquid. In a medium bowl, mix Greek yogurt with grated cucumber, minced garlic, olive oil, lemon juice, and dill. Season with salt and pepper to taste. Stir well before covering and refrigerating for at least 30 minutes.
  3. Preheat grill to medium-high heat. Thread marinated lamb onto skewers. Grill for 8–12 minutes while turning occasionally until cooked through (145°F for medium-rare). Alternatively, heat olive oil in a large skillet over medium-high heat and cook the lamb for 6–10 minutes until done, patting the lamb dry before cooking.
  4. Warm pita bread on the grill or stovetop. Spread tzatziki sauce generously over each pita. Remove lamb from skewers and place on top of tzatziki sauce. Add sliced red onion, sliced tomatoes, and sprinkle fresh parsley if desired. Fold or roll up the pita bread to create a wrap. Serve immediately.
