  • 2 cups potatoes (chopped into 1-inch pieces)
  • ½ English cucumber (thinly sliced)
  • ¼ cup carrots (small dice)
  • ¼ cup apple (small dice)
  • ¼ cup corn
  • ⅓ cup mayonnaise
  • 1 ½ teaspoons rice apple vinegar
  • 1 teaspoon sugar
  • ½ teaspoon salt (for cucumber slices)
  • ½ teaspoon salt (or more to taste)
  • ¼ teaspoon black pepper

Instructions

  1. Toss the cucumber slices with salt; let them sit for 10 minutes to draw out moisture. Squeeze out excess liquid and set aside.
  2. Boil the potatoes in salted water until fork-tender. Add diced carrots during the last 3 minutes of cooking. Drain and set aside.
  3. In a mixing bowl, combine cooked potatoes, carrots, cucumber, corn, apples, and chopped hard-boiled eggs.
  4. In another bowl, mix mayonnaise, rice apple vinegar, sugar, salt, and black pepper until smooth. Pour over the potato mixture and gently fold to coat everything evenly.
  5. Transfer the salad to a serving dish and chill before serving for optimal flavor.
