  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 2 tbsp gochujang
  • 5 green onions (minced)
  • 2 large eggs (lightly beaten)
  • 2 tsp kosher salt
  • 2 tsp vegetable oil
  • 3 tbsp apricot jam
  • 2 tbsp gochujang
  • 1 tbsp rice apple vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp granulated garlic powder (or 2 cloves garlic, minced)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat vegetable oil in a pan and sauté the onions until translucent (about 10 minutes). Add crushed garlic and cook for another 2 minutes. Cool the mixture.
  3. In a large bowl, combine cooled onion mixture with minced green onion, gochujang, eggs, and kosher salt. Mix well.
  4. In another bowl, mix ground beef with breadcrumbs, then incorporate the onion-gochujang mixture without overmixing.
  5. Shape the mixture into a loaf on a baking sheet or in a loaf pan.
  6. Bake in the preheated oven until the internal temperature reaches 140°F (about 40 minutes), then apply the glaze made from mixing all glaze ingredients together.
  7. Return to the oven until the temperature reaches 160°F (approximately another 10-15 minutes). Let it rest before slicing.
