  • 1 cup chopped kimchi
  • 300 g boneless, skinless chicken thighs
  • 2 tablespoons vegetable oil

  • 1 tablespoon grated ginger
  • 3 green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 2 large eggs
  • Salt to taste

  6. Mix in kimchi juice, remaining soy sauce, and gochugaru.
  7. Incorporate cooked chicken back into the skillet; stir well.
  8. Create a well in the rice; scramble eggs before mixing through.
  9. Drizzle sesame oil and add green onion tops; stir to combine.
