  • 2 large onions
  • 2 medium carrots
  • 3 Yukon gold potatoes
  • 2 cloves garlic
  • 1 tbsp butter
  • 5 cups water or stock
  • 1 lb cubed beef (or turkey/lamb)
  • 8 oz Japanese curry roux
  • 1 red apple (Fuji or Honeycrisp)
  • 8 cups medium grain white rice

Instructions

  1. Chop onions, carrots, and potatoes into large chunks; mince garlic and grate the apple.
  2. Soak potato chunks in warm water for about 15 minutes to remove excess starch.
  3. Season beef cubes with salt; let sit for 10 minutes.
  4. In a large pot, heat oil, sear beef until browned on all sides; remove from pot.
  5. Sauté onions in butter until caramelized (about 8 minutes); add garlic and sauté for another 30 seconds.
  6. Stir in potatoes and carrots for one minute before returning beef to pot.
  7. Pour in water, add grated apple, honey, ketchup, and Worcestershire sauce; stir well.
  8. Simmer covered on medium-low heat for about 15 minutes; skim off any scum.
  9. Check potatoes for doneness; when soft, turn off heat.
  10. Gradually dissolve curry roux into the pot using chopsticks; simmer uncovered for another 15 minutes until thickened.
  11. Serve over steaming rice.
