  • 1 cup crushed buttery crackers
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, sliced
  • 2 cups Brussels sprouts, quartered
  • 2 cups cremini mushrooms, quartered
  • 3 carrots, sliced
  • 1 tsp chopped thyme
  • Salt and pepper
  • 2 tbsp all-purpose flour
  • 1 cup broth
  • 1/3 cup heavy cream
  • 1/2 cup shredded Gruyere cheese

Instructions

  1. Preheat oven to 350°F (175°C) and butter a deep pie dish.
  2. In a bowl, mix together the cracker crumbs, panko, Parmesan, black pepper, thyme, and melted butter. Press half into the bottom of the pie dish and bake for 12 minutes.
  3. Sauté onion in olive oil until translucent. Add garlic and vegetables; cook until tender.
  4. Sprinkle flour over the vegetables; gradually stir in broth and cream until thickened.
  5. Pour filling into crust, top with remaining crumble mixture and cheese. Bake for an additional 15 minutes until bubbly.
