  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 2 cups cooked rice or quinoa
  • 1/4 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Let it sit for about 30 minutes.
  2. Cook the marinated chicken over medium heat for about 5–6 minutes per side until completely cooked. Slice into strips.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out dough into circles about ¼ inch thick. Add rice or quinoa on one half of each circle.
  5. Top with chicken strips, cherry tomatoes, cucumber, red onion, olives, feta cheese, and tzatziki sauce.
  6. Fold over the dough and seal edges firmly; crimp if desired.
  7. Bake for approximately 15–20 minutes until golden brown.
