  • 1 tsp baking powder
  • 1 tsp baking soda

  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 tsp vanilla extract
  • 1 cup white granulated sugar
  • 1 cup light brown sugar
  • 2 cups grated zucchini
  • 1 medium apple, peeled and diced
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 325°F (163°C) and grease two 8 x 4 inch loaf pans.
  2. Grate the zucchini and chop the apple; set aside.
  3. In a large bowl, combine flour, cinnamon, baking powder, baking soda, and salt.
  4. In another bowl, whisk together eggs, oil (or applesauce), vanilla extract, white sugar, and brown sugar until smooth.
  5. Add wet ingredients to dry ingredients and mix until just combined. Fold in grated zucchini, diced apple, and walnuts.
  6. Let the batter rest for about 5 minutes before dividing between prepared pans.
  7. Bake for 40–60 minutes or until a toothpick comes out clean. Cool in pans for 20 minutes before transferring to a rack.
