  • 3 garlic cloves (minced)
  • 2 pounds chicken breast (cut into ¾-inch chunks)
  • 3 ounces tomato paste
  • 3 ounces red curry paste
  • 1 (14-ounce) can coconut milk
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • Rice or naan for serving
  • Cilantro (for garnish)

Instructions

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Sauté diced onion for 3–4 minutes until softened.
  3. Add grated ginger and minced garlic; cook for an additional 1–2 minutes.
  4. Stir in garam masala, chili powder, mustard seeds, coriander, and curry powder; toast for 1–2 minutes.
  5. Add chicken chunks; brown on all sides for about 5–7 minutes.
  6. Mix in tomato paste and red curry paste; cook for another 2–3 minutes.
  7. Season with salt and black pepper; pour in coconut milk and stir well.
  8. Bring the mixture to a simmer; cook for about 15–20 minutes until the chicken is cooked through and sauce thickens.
