  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/2 cup honey
  • 2 tablespoons hot sauce
  • 1 medium yellow onion
  • 2 bell peppers (any color)
  • 14.5 oz can diced tomatoes
  • 1/2 cup chicken broth
  • Fresh parsley (for garnish)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes (adjust to your spice preference)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. In a medium bowl, mix flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Coat cubed chicken in the mixture.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown; remove from skillet.
  3. In a small saucepan, combine honey, hot sauce, apple cider vinegar, red pepper flakes, garlic powder, and smoked paprika; simmer for about 5-7 minutes until slightly thickened.
  4. In the same skillet, add 1 tablespoon of olive oil and sauté sliced onion and bell peppers until softened. Stir in minced garlic for an additional minute.
  5. Add diced tomatoes and chicken broth to the skillet; season with oregano and basil. Let it simmer for about 10 minutes.
  6. Return cooked chicken to the skillet and pour over the hot honey sauce; stir gently to combine and simmer for another few minutes.
  7. Garnish with fresh parsley before serving over rice or quinoa.
