  • 2/3 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract

  • 4 packets instant hot cocoa mix
  • 1 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup vegan marshmallow bits

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time along with the vanilla extract.
  3. In another bowl, whisk together flour, hot cocoa mix, baking soda, and baking powder.
  4. Gradually combine the dry mixture into the wet mixture using low speed until just combined.
  5. Gently fold in chocolate chips and vegan marshmallow bits until evenly distributed.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for about 9 minutes. Press extra chocolate chips and marshmallows into warm cookies after removing from the oven.
