  • 3/41 cup plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 23 tablespoons honey
  • 1 teaspoon lemon zest
  • pinch of kosher salt and ground black pepper
  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice
  • 4 cups romaine lettuce, chopped
  • 1 cup slivered almonds
  • 1 1/2 cups blueberries
  • 1/2 cup dried cranberries

Instructions

  1. Prepare the dressing by combining Greek yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a mason jar or bowl. Mix until well combined and set aside.
  2. Marinate the chicken by mixing soy sauce, olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper in a bowl. Pour the marinade over chicken breasts in an airtight container and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium heat. Grill the chicken for about 4-5 minutes on each side until fully cooked (internal temperature reaches 160°F). Let rest before slicing.
