  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  1. Marinate the chicken by combining olive oil, salt, and pepper in a mixing bowl. Coat the chicken breasts evenly and let them marinate for at least 10 minutes.
  2. Rinse quinoa under cold water. In a medium saucepan, bring vegetable broth to a boil, add quinoa, cover, and simmer for about 15 minutes until liquid is absorbed.
  3. Preheat your grill pan over medium-high heat and grill each chicken breast for about 6–7 minutes per side until cooked through (165°F internal temperature).
  4. Whisk together honey, Dijon mustard, apple cider vinegar, salt, and pepper to prepare the dressing.
  5. Fluff cooked quinoa and divide into bowls. Slice grilled chicken and arrange over quinoa with cherry tomatoes, cucumber, bell pepper, and avocado slices. Drizzle with honey mustard dressing before serving.
