  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 4 medium potatoes, diced
  • 2 bell peppers, chopped
  • 2 carrots, sliced
  • 1 red onion, sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, garlic powder, dried thyme, dried rosemary, salt, and black pepper. Add chicken drumsticks and toss until evenly coated.
  3. Dice the potatoes and chop the bell peppers, carrots, and red onion.
  4. Arrange marinated chicken on one side of a baking sheet; on the other side, place diced potatoes and prepared vegetables.
