Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup granulated sugar (for filling)
  • 2 large egg yolks
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. In a bowl, combine flour, sugar, baking powder, salt, and nutmeg. In another bowl, whisk together milk, melted butter, eggs, and vanilla. Mix until just combined.
  2. Heat oil in a deep pan to 350°F (175°C). Use a donut scoop to form dough balls and fry until golden brown (3-4 minutes). Drain on paper towels.
  3. For the filling, heat heavy cream and sugar until simmering. Whisk egg yolks and cornstarch in a separate bowl; slowly add hot cream while whisking continuously. Return to heat until thickened.
  4. Once cooled slightly, fill each donut hole with the crème brûlée mixture using a piping bag.
  5. Sprinkle granulated sugar on top of each filled donut hole and caramelize with a kitchen torch until golden brown.
