  • 3/4 cup chopped English cucumber
  • 3/4 cup shredded carrot
  • 1 yellow bell pepper (chopped)
  • 1/2 cup diced red onion
  • 5 ounces sliced olives
  • 14 ounces cherry tomatoes (halved)
  • 34 ounces turkey pepperoni (quartered)
  • 6 ounces fresh mozzarella (cubed)
  • Fresh basil
  • 1/3 cup light Caesar dressing
  • 1/3 cup light Greek dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook rotini noodles in boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine chopped vegetables, olives, turkey pepperoni, and mozzarella.
  3. Add the drained pasta to the bowl and mix in both dressings along with salt and pepper.
