  • 3 chicken breasts
  • 1/2 cup celery (diced finely)
  • 1/2 cup red grapes (cut into quarters)
  • 1 tablespoon onion (finely minced)
  • 1/2 to 3/4 cup mayonnaise
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 1 teaspoon coarse salt
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon creole seasoning mix

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface until about 1/8 inch thick and cut into squares or circles.
  3. Cook the chicken by boiling or grilling until fully cooked. Let it cool before shredding.
  4. In a mixing bowl, combine shredded chicken, diced celery, quartered grapes, mayonnaise, salt, and creole seasoning until well mixed.
  5. Place a spoonful of chicken salad in the center of each pastry piece. Fold and seal edges using a fork.
  6. Bake on a parchment-lined baking sheet for about 12 minutes until golden brown.
